Almond-Crusted Wild Icelandic Haddock

Refined and delicious simplicity, bon appétit! The almonds bring the crunch and healthy fats, the lemon adds the zing, and the haddock adds the essential nutrients. What a win.

Ingredients - 4 servings

1 lb wild Icelandic haddock fillets
1½ cups all-purpose flour
1 cup of your favorite beer, preferably light
½ cup fine dry bread crumbs
½ cup finely chopped almonds
2 tps finely chopped thyme
2 tbsp extra virgin olive oil
1 lemon, cut in wedges

Directions

Step 1
Preheat oven 410°F and line a baking sheet with parchment paper.

Step 2
Cut the fish fillets into 1-inch-thick strips.

Step 3
Prepare 3 shallow plates. Place the flour in the first one, beer in the second one and combine breadcrumbs, almonds and thyme in the third.

Step 4
Dip fish into the flour, turning to coat, then dip into the beer and finally into the crumb mixture. Place on prepared baking sheet and drizzle with oil.

Step 5
Bake until golden brown, or about 12 minutes. Serve with lemon wedges.
